Ingredients
1/4 cup olive oil
2T balsamic vinegar
salt & pepper to taste
1 big pinch dried thyme (or 1 tsp fresh leaves)
3 big cloves garlic (crushed)
2 medium eggplant
Directions
Slice eggplant
Mix all ingredients to marinade and soak the eggplant in it. Make sure all surfaces are covered
Grill slices for 8-10 minutes, turning often, until browned and tender.
